Does this replace Stripe?
No, it sits alongside it. Voxel's Stripe integration keeps working exactly as it does now; this adds more ways for a buyer to pay when Stripe is not the one they want.
Do subscriptions and vendor payouts work on the other gateways?
PayPal supports one-time payments, subscriptions and marketplace transactions with vendor payouts. Coverage varies by gateway, so check the docs for the specific one you need before you buy.
What is offline payment for?
Cash on delivery, bank transfer or pay at pickup. The order is placed immediately so you do not lose the sale, and you mark it paid once the money arrives.
Why would an order total $0?
A full-value coupon or a free item can take the total to zero. Normally the buyer still goes through Stripe checkout for nothing; zero checkout skips that and completes the order immediately.
